Zucchini, Black Bean, and Corn Tostados

Purple Cabbage with Apples and Onions
1 Large Head Purple Cabbage, Shredded
1 Red Onion - Thinly Sliced
2 Apples, chopped
1/4 Cup Red Wine Vinegar
2 Tablespoons SmartBalance light buttery spread
1/2 Cup Veggie Broth
2 Tablespoons Coconut Sugar
1/2 Tsp. Salt
2 Tsp. Caraway Seed
1/2 Tsp. Fresh Ground Black Pepper
In a large bowl combine shredded cabbage, salt, and red wine vinegar. Mix and let stand for 5 minutes.
In a large skillet over medium heat, melt buttery spread. Add cabbage, Onions, Apple, Caraway Seed, Chicken Broth, Brown Sugar and Pepper.
Reduce heat to low and cover skillet. Cook cabbage on low for an hour until cabbage is tender.
